Fun fact about French roasts, it's not about the bean!  It's all in HOW it's roasted.  Normally, we let air in during the roast, allowing things like smoke to exit the roaster.  In a french roast though, we actually reverse that theory and trap air inside the roaster, which allows the beans to absorb some of that smokey flavor, and TA DA!! French roast coffee is born!
